Meet Merril May 7, 2015 Author: admin Comments Off When I started my apprenticeship in a 600 bedroom five star Cinnamon Grand Collection Hotels in Sri Lanka, I spent 3 months in training learning about the hospitality environment and excellent service skills. We learnt the hard way by carrying heavy trays nine floors up and down until we found our perfect balance. And it was another three months before we could approach customers – we worked in the back of the service areas observing serving styles and procedures. The importance of customer service was set to the highest standard in all levels. Delegation was crucial no matter if it was 1500 guests or 100 guests. Everybody had tasks to prepare for service that lead to a smooth operation. Briefing was carried out each and every time prior to service in all ten of the F&B outlets. Menu knowledge, in house functions, occupancy levels, VIP’s in house and service procedures were the main discussion areas. We managed weddings up to 3500 guests, state banquets up to 1200 guests attended by foreign dignitaries and outside catering functions catering for 1500. Everything was possible and successful because there was a great drive and a highly skilled team. During my 10-year career at Cinnamon Grand, I had the opportunity to work in 10 different food & beverage outlets and gained tremendous knowledge and expertise in the trade in my capacity as Food & Beverage Manager. Journey To Macroom In 2002 I received a call from HR manager of the Castle Hotel Macroom to join the family run hotel. I have been recommended to Don Buckley, owner of the hotel by one of his colleagues. It was brilliant, and a new door opened in my career. My new journey began here as a waiter in Macroom Castle where I could use my expertise to help improve standards. I changed the small breakfast buffet table into a professionally laid out breakfast buffet with additional options. Restaurant and function room also had a transformation by changing tablecloths, cutlery and glassware. We got everything right but the most important part was the gatekeepers of the hotel – the people who look after our customers. Then, I was asked to train the F&B staff by the management. We undertook training to maintain the quality and consistency of our servers. I received an Irish Welcome Award certificate from Failte Ireland in recognition of my service towards customers and was promoted to restaurant manager, all the hard work we did as a team paid off… Success At The Castle Hotel Macroom In 2008 The Castle hotel received the official ‘four stars’ from Failte Ireland. We achieved this goal working around the clock maintaining highest standards in consistency. The Castle Hotel has won many awards over the years such as winner of 2014 best hotel carvery in Munster & Ireland; we are in the top 25 Trip Advisor Hotels in Ireland, and winner of the 2015 Traveler’s Choice Award. I did my Higher Certificate course in Hotel Management at Cork IT over a 3-year period while working full time. Learning is an opportunity and one that always inspires me. In 2010 I finished my bachelor of business degree in Hotel Management. At present I am a Senior Manger at the Castle Hotel and I manage the Conference & Banquet Department and have been training our F&B staff for over the last 6 years. I love new challenges in every day of life and also to share my journey.
